Grape Variety: 100% Tempranillo
The climate in this area is extremely continental with Atlantic influences, arid character. It is characterized by an average annual temperature of 12-13ºC, with minimum and maximums of -11ºC and 37 ° C. As we can see, the temperature variation is large, promoting the maturation of the grapes. This wine is a varietal Tinta de Toro (100%) from old vines from the El Pego (Zamora), planted 700 metres above sea level. In terms of processing, a cold maceration is carried out for 5-7 days and alcoholic fermentation occurs in a spontaneous manner by pumping twice a day. Subsequently, a post-fermentation maceration of 7 days and a second fermentation (malolactic) is done in barrels. Finally, Juan Rojo spends 8 months in French oak barrels from Allier and a minimum of 12 months in the bottle before marketing. We recommend opening and decanting before consumption to drink at its best.
