Blend: Merlot 69%, Cabernet Franc 19%, Petit Verdot 6%, Cabernet Sauvignon 6%
On the nose are aromas of blueberry, plum, fruit-cake and caramel with subtle cherry and casis notes in the background. The palate is dry but smooth with flavours of blackberry, black olive, cocoa and marzipan. Substantial yet soft tannins provide a sublime texture that is balanced by good acidity leading to a long and complex finish.
The 2010 vintage was a dry warm year which allowed for full ripening of our estate Cabernet Franc grapes. An excellent Niagara vintage! The grapes were harvested from mid to late October with a portion set aside to dry for 100 days in the appassimento method. Each grape variety was aged separately in French and American oak barrels for 23 months before being blended. This wine is at its best now, but will continue to age in your cellar through to the year 2020.
Pair this wine with slow roasted game meats like venison, pulled pork, smoky ribs, charcuterie and aged cheeses, and mushroom risotto.
