Guillaume Boillot makes the red wines at his family’s domaine, including this Volnay, exceptionally complex for a village wine. It shows itself in phases of red fruit, then oak, then earth and spice, opening and closing with air. Lean, structured and firm, it’s a wine with staying power. Age it for at least another two years to catch it at its best.
Pairs with mushroom risotto, roast turkey and fruit jam. Roasted white meats and lighter red meats. Pan seared asian style duck also matches well.
